I tried these at Life n One in Dubai and was so impressed I had to make my own version at home. So simple to do.
I put this under breakfast, but to be honest I could eat it for lunch and dinner too, every day.
Serves 1 (large size)
1 cup of chickpea flour
1 cup of plant-based milk
1tbsp olive oil
salt and pepper for seasoning – I personally use a lot of salt
- In a bowl chuck in the flour and milk and whisk. You want a medium consistency – not to runny and not too chunky, so add extra milk accordingly.
- In a saucepan heat the olive oil. Then on a medium heat pour in the pancake mix.
- Allow to cook underneath before using the spatula to loosen the pancake and flip to cook the other side.
- Eat as is with a drizzle of olive oil or take it up a notch and serve with ham and vegan cheese in the middle (fold over and enjoy).
