A Kicking Korma

Korma is for wusses, that’s why this bad boy has a little kick.

Serves 2


2tbsp curry powder

2tsp ground cumin

2tsp cayenne pepper

2tsp ground coriander

1tsp cinnamon

60g ground cashews

1 tin of coconut milk

2 skinless chicken breasts (chopped)

1 onion, diced

4 garlic cloves


  1. Sprinkle half the curry powder on the chicken and set aside.
  2. In a frying pan fry the onion and garlic. Once sweated add in the cumin, cayenne, coriander and the rest of the curry powder.
  3. Stir dry ingredients for a minute and add the coconut  milk.
  4. When the milk starts to boil throw in the chicken pieces and simmer until the chicken pieces are cooked right through. Then stir in the ground nuts and seasoning.
