Korma is for wusses, that’s why this bad boy has a little kick.
2tbsp curry powder
2tsp ground cumin
2tsp cayenne pepper
2tsp ground coriander
60g ground cashews
1 tin of coconut milk
2 skinless chicken breasts (chopped)
1 onion, diced
4 garlic cloves
- Sprinkle half the curry powder on the chicken and set aside.
- In a frying pan fry the onion and garlic. Once sweated add in the cumin, cayenne, coriander and the rest of the curry powder.
- Stir dry ingredients for a minute and add the coconut milk.
- When the milk starts to boil throw in the chicken pieces and simmer until the chicken pieces are cooked right through. Then stir in the ground nuts and seasoning.
